Dear Dr. Bogomolny:

In your beautiful Interactive math pages on the web, in section Arithmetic and Algebra, there is the Flipping pancakes puzzle. Have you seen this puzzle treatead anywhere in more detail? I am interested in the following question:

    What is the minimum number of flips to put a stack of n pancakes in order for any initial ordering of pancakes?
