What Alan was trying to say was that if you pick a goat, then Monty will show you every other goat. This is of course true in the case with two goats; if you pick one, then Monty will show you the other. So Alan's analogy was that for the general game, if you pick a goat, then Monty will show you every other goat. Of course, if you pick the prize, that's a different story.
